Carinthian pasta pioneer Josef Ellersdorfer dies at the age of 87
The city of St. Veit an der Glan mourns the loss of one of its most famous sons: Josef Ellersdorfer died on May 28th at the age of 87. The entrepreneur was not only a co-founder of the esteemed Carinthian noodle production, but also a committed teacher and firefighter.
Josef Ellersdorfer founded the Carinthian noodle production company in 1968 together with his brother Heinz, which is now known for its quality far beyond the borders of Carinthia. The pasta is made according to traditional recipes and with the best regional ingredients and free-range eggs. The production of this popular pasta has a long history, dating back to 1931 when her grandfather opened the first butcher shop. However, this was closed on October 23, 2023, and the focus is now fully on the noodle craft, as reported on Fleisch und Co.
A life full of merit
In addition to his role as an entrepreneur, Ellersdorfer was also commander of the St. Veit Volunteer Fire Department from 1968 to 1977 and received numerous awards for his services, including the Medal of Honor from the Carinthian Chamber of Commerce and the Medal of Honor from the city of St. Veit. Even after his retirement, he showed his curiosity and thirst for knowledge: He studied philosophy in Klagenfurt and graduated with a master's and doctorate. Josef Ellersdorfer leaves behind a family with four children who always supported him.
His company's pasta products are widely appreciated and are now available retail and wholesale throughout Austria - including at SPAR and Transgourmet. Pumpkin noodles are particularly popular at the moment. At the location in St. Veit, the pasta factory not only remains active, but the employees have also been retained to continue the tradition.
One final honor
The laying in state of Josef Ellersdorfer will take place on Tuesday, June 17th, from 2 p.m. in the St. Veit ceremonial hall. A common prayer is scheduled for the same evening at 6 p.m. The urn burial will take place at a later date in the immediate family circle, which expresses the close ties of his family.
The history of Tyrolean pasta crafts is also closely linked to the region itself. Fruit and vegetable cultivation also has a long tradition in St. Veit, which is reflected in the high-quality regional products. According to My Farm Shop, agricultural practices have undergone many changes over time, with the focus on sustainable methods and organically certified farming methods becoming increasingly important.
The combination of traditional crafts and modern approaches ensures that regional products - be it pasta or fresh produce - not only meet the high demands of customers, but also contribute to strengthening the local economy. Josef Ellersdorfer was a symbol of this passion.
