New life for the Gasthaus Stafler: Opening as Zum Bretschneider”!

A fresh breeze is blowing through Meidling because the Gasthaus Stafler has reopened its doors as “Zum Bretschneider”. After it was closed in autumn 2024 due to Georg and Marie Stafler's health problems, the inn was empty for a whole year. But a call from the popular artist Voodoo Jürgens on Facebook in May 2025 triggered a real storm of interest. Not only regular guests but also new gourmets wanted to bring about the revival of this traditional restaurant. The new operators, Klaus Silberbauer and Jürgen Sattler, finally took the reins and dared to restart!Gault Millaureports that Silberbauer and Sattler have been working together in the catering industry for a long time and are now setting up their own business as a team.

It is indeed an exciting time for both of them. While Sattler used to run the “Sattlerei” restaurant in the second district, for Silberbauer it is the first step into self-employment. The renovations in the inn have largely been completed: Only fine work in the guest room still needed to be done, although the charm and dark wood paneling from the 1950s were retained. The restaurant is now fully functional and ready to welcome guests again.

A new culinary concept

The menu is being refined under the new name “Zum Bretschneider”, although the South Tyrolean specialties from the old inn had to go. In the future, hearty delicacies and vegetarian options will be on the menu. The highlights include:

  • Sulz von der Kalbszunge – 12,50 Euro
  • Wiener vom Kalb – 21,50 Euro
  • Gebackene Blunze – 11,50 Euro
  • Kärntner Kasnudeln – 15,50 Euro
  • Gebackene Portobello-Pilze – 14,50 Euro

The return to the tried and tested Viennese classics is well received by the regular guests, as many are happy that their favorite restaurant is back!

The gastronomy scene in Vienna is on the rise

The reopening of “Zum Bretschneider” is just part of a larger trend in Vienna. 2023 is widely celebrated as a year of new openings and new acquisitions.
